A small tough wiry tree growing on the rocky hills of inland Tasmania, the Bursaria erupts with millions of tiny white flowers the shape of a burning star – this is our Christmas Bush.

A herald of our antipodean summer Christmas – the Bursaria produces this outstanding honey with its buttery smooth marzipan like complexity, it is one of our richest and most complex flavoured honeys.

Our favourite ‘home’ apiary honey, unique and inspirational in its crystallising nature. It is the ‘mother’ of the special texture we give all our honeys, firm and soft, solid and smooth. The Christmas Bush honey is very heat sensitive and candies with a wonderful fine texture.
